Dillon Coffee Lab & Espresso Bar

Dillon Coffee Lab & Espresso Bar is a specialty espresso bar located at 124 Main Street, Suite 107, in downtown Dillon, Colorado, opened on March 15, 2025, by baristas Andrii Iwashko and Jonathan Grove. The shop roasts its own coffee in-house using single-origin beans sourced from Forest Coffee, a family-owned operation in Tolima, Colombia, with a portion of proceeds going back to support farm improvements. Guided by the motto “Brew Good, Do Good,” the cafe aims to serve as a community gathering place for Dillon’s mountain residents and visitors, open daily from 6:30 a.m. to 4:00 p.m.
