French Settlement Roasting Co. is a U.S. Air Force veteran-owned specialty coffee micro-roaster founded by Billy and Shannon LaGrange in French Settlement, Louisiana, starting with nothing more than a popcorn popper to roast their first batches. The business has since grown into a full-scale roasting operation in Holden, LA, supplying over 20 locations — including LSU’s campus and Washington, D.C. — while operating a mobile coffee truck and preparing to open their first brick-and-mortar café. Named the Livingston Parish Small Business of the Year in 2026 and recognized as the official coffee of Livingston Parish, the company is known for its small-batch, organic, specialty-grade Arabica beans and popular blends like “Bloody Angola” and “Jet Fuel.”
