Speckled Ax

Speckled Ax is a specialty wood-fired coffee roaster and café based in Portland, Maine, founded in 2007 under the name Matt’s Wood Roasted Organic Coffee in Waterville before establishing its Portland presence. The roastery uses a vintage 1970s Italian Petroncini roaster fueled by locally sourced kiln-dried hardwood — one of only a handful of wood-fired coffee roasters in the United States — to produce certified organic single-origin coffees, blends, and espresso. With multiple café locations across Portland, including its flagship on Congress Street, Speckled Ax is committed to quality, sustainability, and ethically sourced green coffee, making it a beloved destination for both local coffee lovers and visitors to Maine.
