Cutbow Coffee Roastology is an artisan coffee roastery and café founded in 2017 by Albuquerque native Paul Gallegos, who honed his craft over more than 25 years as a professional roaster with Peet’s Coffee before returning to his home state. Located at 1208 Rio Grande Blvd NW near Historic Old Town Albuquerque, the shop features a roastery, tasting room, and coffeebar, offering meticulously sourced specialty-grade coffees from around the world alongside a full espresso menu. The business name pays tribute to Paul’s father, a trout fisherman, with the shop named after the cutbow trout — a nod to the family heritage and New Mexico roots that give Cutbow Coffee its distinctive local character.
