The Chatham Rabbit is a specialty coffee shop located at 223B N. Chatham Ave. in historic downtown Siler City, North Carolina, inside the NC Arts Incubator — a nonprofit organization supporting local artists. Opened in October 2018 by owner Brooke Simmons, the shop serves specialty coffee drinks, tea, pastries, and bagels, while operating as a community gathering space surrounded by works from local artists. The Chatham Rabbit is an active community hub, co-hosting events with the NC Arts Incubator such as the Siler City Downtown Music Series, open mic nights, art receptions, guided soundbaths, and community meals. Its name pays homage to the region’s history, when Chatham County rabbits were a celebrated local commodity shipped by rail to restaurants and hotels across the northeastern United States.
