Full City Rooster Coffee Roasting Studio is a small-batch specialty coffee roaster located at 1810 S. Akard Street in the Cedars neighborhood of South Dallas, founded and operated by Michael Wyatt, who has spent over 25 years perfecting the craft of coffee roasting. The studio sources beans from origins including Bolivia, Colombia, Guatemala, and beyond, roasting them in the medium range to achieve a balance of body, aroma, and low acidity, with its blends used by local restaurants and bars across Dallas and shipped as far as Australia. Open to the public daily from 8 a.m. to 2 p.m., the roasting studio doubles as a community gathering space, featuring work by local artists on its walls and an annual partnership with Cedars Open Studios, a nonprofit dedicated to supporting art and culture in the surrounding neighborhood.
