Cardoon

Cardoon is a cozy cafe bar established in 2022, located at 2423 NW Market Street in Seattle’s Ballard neighborhood, founded by married couple Tiffany Hu and Alex Sippel, whose Chinese and German heritages inspire the house-made menu of culturally blended bites, specialty coffee, and low- and zero-proof cocktails. As a multi-roaster cafe, Cardoon features both local and international roasters with rotating single-origin options, alongside signature offerings like a soy sauce caramel seaweed latte and a vegan Tomato “Egg” Rice dish that bridges both culinary traditions. Before opening their standalone location, the owners built community roots by operating the Freya Cafe space at Seattle’s National Nordic Museum, reflecting their broader mission of fostering connection through shared food and culture.
